Use it mainly for cooking, to sautee your spices. This is the secret to cooking, sautee spices in ghee and then add all the other ingredients to your food and you end up with a delicious feast.
You can also use it on bread or toast, although good or even excellent quality butter can also be used in this case.
As you will learn in this one chapter. Good quality oils, such as ghee, and good butter can be used by people of Vata body types and Pitta also, people with a Kapha type should eat it in less quantity.
“Ghee is also really good for your colon because it’s loaded with Butyrate. Ghee has the highest concentration of butyrate compared to any other food, including butter. Microbes usually make butyrate from the fiber. However, if you have GI problems such as Irritable Bowel Syndrome, Leaky Gut, Colitis, or if you damaged your colon in some way, the capacity to make and absorb butyrate goes way down. This is why taking ghee can be very beneficial for people with GI problems. Butyrate provides your colon cells with about 70 percent of their total energy needs. What is the main difference between butter and Ghee? Ghee is clarified butter. They basically remove the milk solids, which include casein. A lot of people have allergies to casein as well as lactose. So, you pretty much get the benefits of butter, without the issues that can mess up your digestive system or give you an allergy. People who are lactose intolerant or cannot digest dairy can easily consume it. If you wish to consume butter, find a really good one, from grass-fed animals and organic in all of its production.
Ghee also has Lutein, which is a type of carotenoid and is really good for your eyes. It can actually help prevent something called macular degeneration. As we get older, a lot of people get that condition and it affects their vision. Ghee can help you avoid that condition.
One of the really cool things about ghee is that it has all of the fat-soluble vitamins, including Vitamin A, Vitamin D, Vitamin E, and Vitamin K2. In fact, ghee is one of the richest food sources of Vitamin K2. Vitamin K2 is a very important fat-soluble vitamin that keeps calcium in the bone and keeps the calcium out of the arteries and soft tissues like your joints. It’s really important for dental and bone health.
Ghee also has a digestibility ratio of 97%, which is mind-blowing compared to other fats that are not digested as well. Another interesting thing about ghee is that it has medium-chain triglycerides called MCT Fats. The unique thing about these fats is they are not stored as fat. They are used as energy and turn into ketones. Therefore, they bypass the gall bladder and the bile making them much easier to digest. Ghee can also help you increase your bile production to help you digest fat.
Furthermore, it has Short Chain Fatty Acids and that’s really good for gut health. So if you have inflammation of the gut, ghee would be very beneficial. Lastly, ghee also has something called CLA, which is anti-carcinogenic, anti-inflammatory, and has an anti-allergy effect.”
